Like Father Like Son is the signature dish of De Leuf. It is a combination of “Scents of the Sea”, the signature dish of Paul van de Bunt (late father of the current chef, ✝ 2014) and a dish by his son Robin van de Bunt.
Scents of the Sea is a combination of different shellfish with a lemongrass and lime leaf sauce. Robin’s dish brings a new Asian touch with a fried oyster with shiitake, dashi and lovage.
The application of nitrogen when serving creates a special visual and scented experience.
